Hardware question
I just noticed that an NSM2 loco identifies itself (with the current released firmware) as a "Ubiquiti Bullet M"

Yes that's correct if your

The board type is bullet (it's why you use the bullet firmware on it)
Essentially NSML2's are bullets internally (the only difference is they have both RF ports wired and the built in antenna)
Logical (if not physical) circuit board layout is otherwise the same.
