Channels on sector nodes
I have 2 Ubiquity LiteAP AC 5.8ghz 120 degree sector nodes up on my tower. One covering  NW sector and the other covering NE with a little overlap. I read in the docs that they should be on different channels to avoid traffic collisions. Is there a protocol for channel selection, or is it just whatever is available. I have selected 149 and 178 for now.

It wouldn't hurt to do a WiFi scan to see what channels are active in your prospective node's area.     BTW, you'll have to scan at both 10 MHz and 20 MHz bandwidths to see as much as possible.

In the past I was informed that due to Part 15 restrictions on power levels, WISPs who follow the law avoid using channels 134-144 on hilltops.  So, best for us who operate under Part 97.  :-)

Hope that helps.

Different non-overlapping channels.
In my experience, adjacent non-overlapping channels work fine.
