I have installed AREDN firmware to MikroTik hAP ac2 with via PXESRV on windows. I get configuration menu when I using 192.168.1.1 address.

If at that point you unplugged the RJ45 cable to the hAP that is a problem. You need to proceed directly to the next step of the second firmware install with no power cycle. There are several ways to do this, with or without a switch in the middle. I don't use a switch, I just keep the power injector and connection from that point to the node live, but if I need to reset the IP address of the computer doing the connection I just unplug the RJ45 from the computer so the network card can be reset to the new address. Since the POE doesn't come from the computer, but only arrives after the POE injector ... you won't revert to the pre AREDN state.
